One Day Version Of Cheese Cake

For a quick, one-day cheesecake:

  1. Crust: Blend 1 ½ cups graham cracker crumbs, ¼ cup sugar, and ½ cup melted butter. Press into the base of a springform pan. Chill in the fridge for 30 minutes.
  2. Filling: Beat 2 packages (16 oz) cream cheese with ½ cup sugar until smooth. Add 1 tsp vanilla, then mix in 2 large eggs one at a time, and ½ cup sour cream.
  3. Bake: Pour the filling into the crust and bake at 325°F (160°C) for 50-60 minutes, until set but slightly wobbly in the center.
  4. Cool & chill: Let it cool at room temp for 1 hour, then chill in the fridge for at least 4 hours, or overnight if possible.

Top with fresh fruit or your favorite sauce before serving!
